The New and Old Cheeses of Cheshire

I have been so lucky over the years to work with such Cheshire icons as Carole Faulkner, founder of The Cheese Shop Chester. Carol was a farmers daughter and cheese maker since her youth. The first times I saw her easily turning over an enormous round of Cheshire cheese to even out the moisture and texture I was astounded!

This famous promoter and stockist of Cheshire made cheeses also boasts an enviable range of incredible local and global cheeses. Many of the cheeses being made in ther traditional ways in Cheshire are to be found in this fascinating and ever evolving hidden gem, now run by Carol’s daughter, Anne. That said, you still find Carol holding the fort most Tuesdays and Saturdays, offering samples of the classic salty Cheshire Cheese – at one time only made in Chester’s Roman garrisons – to the lucky cheese lovers of Cheshire and beyond.

I will say at this point, Cheshire has a wealth of top class cheese made by superior local cheese makers. This makes it a great location for exploring fascination dairies. Take a minute to look up Claire Burt and Anne Calyton. Both have had incredible journeys, and make insanely good, award winning cheeses. The county of Cheshire has a rich and ancient cheese heritage, which is why it is fantastic to point out new spots selling wonderful UK cheeses such as The Cheese Wedge, and to put a spotlight on our food culture here in Chester.

Cheshire cheese comes in many guises including the wonderful Cheshire Blue. To really appreciate it at its best I would urge you to buy from a local cheese mongers or farmshop, and try Mrs Bourne’s cloth bound Cheshire cheese. It is a world apart.
